Caramel Popcorn

For you Birg :) This stuff is the best!

2 c. brown sugar
1 c. Karo (corn) syrup
1 pinch salt

1 cube butter or marg.
1 tsp. baking soda

1 large bowl of popped corn - usually two full batches in an air popper is plenty.

Instructions: Pop your popcorn, set aside. Bring to boil brown sugar, corn syrup and salt. Boil for approximately 2 -3 minutes, or until color changes to darker brown. remove from heat. Add butter and baking soda. Pour over popcorn and mix well. Spread over wax paper to cool.

This recipe takes only about 20 minutes (if you have all your ducks in a row). Also, I find that it works best with fresh popcorn.

You know, when I think about eating treats, I don't normally think of popcorn. But when I eat popcorn, I become ADDICTED. I can't stop eating it. This recipe is one of those times I CAN'T stop. LOVE IT!

I'm going to try this and hope it turns out!

It's nearly impossible to ruin Birgitta ;) Seth and Jill seem to think that they ruin it every time they make it.. I can't figure out how.. I'm going to have to watch them make it sometime, because it really is super easy. After you add the baking soda, it doesn't smell that great.. but it's FINE!

Oh.. and it will be really thick with the sugar and syrup with these measurements.. and you might be tempted to add just a drop more of syrup.. but DON'T!! It'll thin out as it cooks :)

This is the recipe we had when I was growing up. I know there are other good recipes, but this is a tradition!!!!! Don't over cook it! Yumm, yumm, I want some!
