LAREE'S CRUNCHY MUNCHY

Pop 1/2 cup popping corn and place in the bottom of a large stainless steal bowl, then add:

10 cups cinnamon toast crunch cereal
10 cups Rice Chex
2 cups raw coconut (found at health food stores)
1 1/3 cups pecans
1/13 cups almonds
1 1/3 cups cashews  
(or 2 cups almonds and 2 cups pecans)
2 cups small pretzels broken in half

Mix and set aside

1 1/2 cup butter
1 1/2 cup Karo Syrup
dash of sea salt
2 cups white sugar

Mix together in a sauce pan. Cook and stir over medium heat until mixture comes to a boil.  Continue cooking and stirring for 5-6 more minutes.  Take from the heat and pour over cereal mix, stir until everything is coated. Spread out on parchment paper or 2 or 3 buttered cookie sheets.  Drizzle with melted white chocolate and or dipping chocolate.  When chocolate is set you can package or put in an airtight container.

KRISTI'S KETTLE CORN


INGREDIENTS:

  • 1/4 cup vegetable oil
  • 1/2 cup popcorn kernels
  • 1/4 cup sugar
  • Popcorn Salt

DIRECTIONS:

Heat the oil over medium-high heat. add the popcorn. When the oils sizzles, sprinkle the sugar over the kernels. Cover the pan and crank handle until the popping slows down, about 3 minutes. Remove from the heat and toss with the salt.

Side notes: I don't think a full 1/4 cup oil is necessary.  You can reduce the oil by almost half.  Of course, if you use the full amount it will taste great too.  :)
If you don't have a crank stove-top popper, you can use a heavy duty pan and lid. While corn is popping make sure to shake the pan.

KILLIAN KORN

This is a recipe from the famous "Killians"  who have a professional pop corn business.

4 Quarts popped popcorn
1 cup pecan halves
1 cup whole almonds
1 cup ribbon coconut

Mix in a big round bowl until completely mixed together

1 cup butter
1 1/2 cup sugar
1/2 cup light corn syrup
Bring to a boil and boil exactly 1 minute, take off heat and add 1 teaspoon of vanilla
pour over popcorn mixture!
Spread out on wax paper, voila...YUM

Caramel Popcorn

For you Birg :) This stuff is the best!

2 c. brown sugar
1 c. Karo (corn) syrup
1 pinch salt

1 cube butter or marg.
1 tsp. baking soda

1 large bowl of popped corn - usually two full batches in an air popper is plenty.

Instructions: Pop your popcorn, set aside. Bring to boil brown sugar, corn syrup and salt. Boil for approximately 2 -3 minutes, or until color changes to darker brown. remove from heat. Add butter and baking soda. Pour over popcorn and mix well. Spread over wax paper to cool.

This recipe takes only about 20 minutes (if you have all your ducks in a row). Also, I find that it works best with fresh popcorn.
