CINNAMON ROLLS OR ROLLS

ROLLS/CINNAMON ROLLS

½ Cup vegetable oil
2 tsp salt
½ cup sugar 
2 cups warm milk
1/2 cup warm water
3 well beaten eggs
2 TBSP yeast
7-10 cups flour


Put oil, salt, sugar and milk and water in mixing bowl, mix in 3 cups of flour. 
Add eggs and yeast,mix, 
add flour 1 cup at a time while mixing, watch closely to get the dough smooth, almost sticky, but not sticky. 
Knead until smooth as satin. (In a mixer, need 10 minutes) 
May need more flour.

Let raise until double, at least one hour .  For rolls, Divide into 4 equal part. Roll each part into a circle, spread with melted butter and cut like a pie into 12 equal triangles. Roll each triangle, starting with the large end, place on greased pan. Butter the tops of each roll, cover with a towel and let rise until double...at least one hour.



Bake 350° for 18-20 minutes, or until golden brown and done on the bottom.  
Makes 4 Dozen rolls.

Shape into cinnamon rolls by dividing dough into two parts and rolling out about 12” by 6”.  Spread melted butter, sugar and cinnamon.  Roll up and cut with dental floss about ¾ inch thick.  Place on baking pan, let raise until double,

Bake 350° for 20 minutes, or until golden brown.  

Frost when they come out of the oven with:
3 cups powdered sugar
¼ cup melted butter
1 tsp vanilla
¼ cup milk
Blend together to the consistency you desire, may need more powdered sugar.

Make about 4 dozen Cinnamon Rolls

Bundt Pan Rolls

This recipe is fast and easy via Danielle from Joleen Kooyman

2 cups warm water
1/2 cup sugar
2 T yeast
2 eggs
2T oil
1T salt
7 cups flour, divided
1 cup butter

Combine water, sugar, and yeast.  Let bubble.  Add 3 cups flour, oil, salt, and eggs.  Mix well.  Add 4 cups flour and mix well.  Let rise until double.  Punch it down and divide into 2 pieces.  Melt the butter and put 1/2 in each bundt pan.  Roll out the dough as thin as possible.  Cut into circles. Dip into the melted butter and lay on top of each other like fallen dominoes.  Let rise 1 hour or until 1 inch from the top of the pan.  Bake at 400 degrees for 20 minutes or until golden brown.  Dump onto a plate and serve.  Makes 2 pans.

100% Whole Wheat Rolls

I just made the best whole wheat rolls I have ever made!
I couldn't find my recipe, so I did my best to remember it.  This is what I came up with:

In the bottom of the bread mixer put:
1/2 cup honey
1/2 cup cooking oil
1 TBSP salt

Then add:
4 cups very warm water
3 cups whole wheat flour
1/4 cup powdered milk
2 eggs
2 TBSP yeast

Mix together and then start adding more whole wheat flour, 1 cup at a time.
Add 6 to 9 more cups.  The dough will still be a little sticky.

Let rise until double or even more.
The dough will still be sticky, but you can handle it by spraying Pam on your hands
and on the cupboard and on the rolling pin.

Form Rolls.  (I divided the batch in thirds and rolled out long rectangles and
basted them with butter.   Then I cut out triangles with my pizza cutter, then
rolled them out starting at the wide end.)  Use you own method if you like.

Put them on a cookie sheet sprayed with pam and let rise again.

Bake at 350 degrees for 20-25 minutes, or until done.

Arabele Noble's Potato Rolls (Those wonderful Friday rolls)

This is the recipe my mom used. (I use a Bosch mixer)

2 cups milk
2 cups potato water (with a little mashed potato in it)
2 teaspoon salt
1 cube of butter
1 cup sugar

Add all ingredients together, heat until butter is melted.
When the mixture is cool, add enough flour to make a thin batter.
Then add 6 beaten eggs.
2 Tablespoons yeast (3 if you are in a hurry).
Let the dough rest for 10 minutes.

Then add enough flour to make dough just right (about 9 1/4 c. total?)
Let rise till double.  Roll out about 3/8 inch thick.  Cut into circles. Brush with melted butter and mark center fold line with a knife but be careful not to cut through. Fold and seal edge with a fork.  Place in 11x17 cookie sheet 9 rows of 4 works.  Makes 7 dozen rolls.

Heat oven to 400 then turn down to 375 and bake for 15 minutes.
(Try 350 for 20 minutes)  Brush with butter after baking.
