KATHY'S LASAGNA

1# hamburger
1/4 cup dried onions
1 tsp salt
Cook and drain
Sauce:
1 bottle traditional Prego Italian sauce
1 quart tomatos
1 8 oz can tomato sauce
1 tsp oregano
1 tsp basil
1 tsp parsley
1/4 tsp garlic powder

Combine all of the above ingredients including the hamburger and let simmer for at least on hour.

1/2 pkg lasagna noodles
1# (4 cups) shredded mozzarella cheese
1 pint 2% cottage cheese


In a 9x13' pan:
Spoon a layer of sauce
Put a layer of noodles
Spoon a layer of sauce
Spoon a layer of cottage cheese (I drop about 8 spoonfuls random and spread out a little not covering the sauce completely).
Sprinkle the mozzarella cheese on top of sauce
Put another layer of noodles
Add one more layer of sauce
Spoon a layer of cottage cheese
Top off with the Mozzarella cheese
Sprinkle a little Grated Parmesan Cheese is desired.

Let sit a least 8 hours or over night.

Bake 350 degree 45 minutes to 1 hour

This can be frozen and cooked for a later date.  I thaw it in the fridge before cooking

"Souper" Macaroni & Cheese



3 cups cooked noodles
1 can cream of mushroom soup (I use cream of chicken soup)
1/2 cup milk
1/4 teaspoon mustard
2 cups grated cheddar cheese
generous dash of pepper
french fried onions


Combine all ingredients and put in a casserole dish a bake at 350 for 45 minutes {put the french fried onions for the last five minutes}

Quick Fix: combine all ingredients in a large microwave safe bowl. Nuke for 2 minutes, stir, nuke for 2 minutes, stir, continue until it's all uniform, hot and melted.

It tastes better the next day as leftovers!

Hawaiian Haystacks- Best Sauce Ever!

I got this recipe from my mother-in-law and it has forever changed Hawaiian Haystacks for me! This sauce is amazing.. I'll never go back to cream of chicken soup!

Sauce:
1/4 c. poultry gravy
1 1/4 c. water
3 chicken bouillon cubes
2 c. chicken broth
2 Tbs soy sauce
4 Tbs. corn starch

Mix first two ingredients over low-med heat. Add next three. Then slowly stir in corn starch. turn up your heat and bring to a boil. Turn down and simmer for a few minutes.. ready to serve! The sauce will be very watery until you bring it to a boil and the starch kicks in.. so don't panic :)

I like to add the chicken right in the sauce. In fact, your food storage canned chicken goes perfect in this and makes it almost entirely a food storage meal!

To assemble your haystack (everyone does it their own way):
Rice
Sauce
Chicken (if not in sauce)
Then any of the following: cheese, pineapple,chow mein noodles, slivered almonds, celery, coconut, mandarin oranges, tomatoes, scallions, etc!

YUMMY!!!

Just for fun here are the proportions doubled- in case you're feeding a few families:

1/2 c. poultry gravy
2 1/2 c. water
6 bouillon cubes
4 c. chicken broth
1/4 c. soy sauce
1/2 c. corn starch

Salsa Chicken Burritos

4 chicken breasts
1 pkg. taco seasoning
14-16 oz. jar of salsa
1 can of black beans, drained and rinsed
Tortillas
Put the chicken in the crock-pot with the taco seasoning and salsa. Cook for 4-8 hours depending on if the chicken was thawed or frozen when you put in the crock-pot. Shortly before assembling the burritos, shred the meat with a fork in the pot. Fill the tortillas with meat then black beans and cheese, sour cream, sliced olives, whatever you prefer. Roll up and serve. I have used canned chicken with this recipe, however I didn't cook it that long in the crock-pot.

"Bajio Sweet Pork Salad" Copy Cat

I made this salad last week and it was DELICIOSO! I found these recipes online. The one for the sweet pork was from our local ABC 4 news who had one of the big wigs from Bajio on their show to present, so I thought it would be a pretty good recipe and it sure was!

So the layers in a salad you would get at Bajio (or Cafe Rio) include:
1- Tortilla (I used the uncooked 'tortilla land' brand you can find at Costco or most grocery stores by the milk, butter, etc. for sure at Walmart, smiths, maceys)
2- Sweet Rice (recipe below)
3- Black Beans (I just opened a can of seasoned black beans)
4- Corn
5- Sweet Pork (recipe below)
6- Chopped romain lettuce
7- Cheese
8- Any additional toppings you like: sour cream, guacamole, pico, salsa, etc
9- Tortilla strips (instructions below)
10- Creamy Tomatillo Ranch (recipe here)

And that is one dreamy meal.. and those you are serving it to will think you are the BEST!


Recipe for:
Sweet Pork

pork
3 lbs pork roast 
2 quarts water 
4 cups sliced white onions
1/4 cup salt
1 cup sugar

Marinade
Simmer together the following ingredients for 1 hour
4 cups enchilada sauce
1 cup brown sugar
2 cups soda water or coke/dr pepper
1 Tbs taco seasoning to taste
1 small cans pineapple juice (I added this to original recipe to try to reduce the spiciness of the taco seasoning because I had overdone it with almost 3 Tbs, my sis-in-law Birgitta recommended the pineapple juice and it was sooooo good that I'm always going to use it)

Cook pork in crock pot until tender enough to shred (about 8 hours). 
Drain pork and shred with fork, keeping pork in original cooking pot
Pour hot marinade over shredded pork
keep warm



Recipe for:
Sweet Rice

1 Tbs oil
1/2 of a white onion, chopped (add more or less to your taste)
1/2 bunch fresh cilantro chopped
1 1/3 c. white rice
3 c. chicken broth
1/4  c. white sugar
heaping 1/2 tsp salt (1/2 tsp salt per cup of rice)

Put a little oil in bottom of pan
Saute chopped onion until translucent
On the side, combine the chicken broth and sugar, letting sugar dissolve (get this ready before you add the cilantro so it's ready to pour)
Add rice, cooking it until it is brown (be careful not to burn)
Add chopped cilantro (no big stems) to your onions and rice and saute 30 seconds more or so

Pour in broth with sugar, add salt, combine, and bring to boil
Cover and let cook on low/med low until rice is done, about 20-25 min
Fluff with fork before serving.


Tortilla Strips
Use tortillas of your choice (white corn, yellow, corn, flour)
Cut into thin strips

In large skillet, heat vegetable oil and fry up your strips, adding plenty of salt for deliciousness. Fry until light to golden brown.

Enjoy! You will be stu-uffed.

Chicken With Parmesan Crust

This is Kristi's Recipe. She sent it when Danielle asked all os us to email some good recipes. She served it when I was in Kansas. It is yummy and she said it is easy.


Ingredients
4 boneless skinless chicken breasts
1/4 cup Italian Dressing
2 T Olive oil
3 T butter or margarine
1/3 cup breadcrumbs
2 T grated Parmesan cheese

Preheat oven to 375 degrees F. Marinate thawed chicken breasts with Italian dressing for 10 - 15 minutes. Meanwhile, mix melted butter, breadcrumbs, Parmesan cheese in a small bowl, and set aside. Preheat frying pan over medium heat and add olive oil. Lightly coat chicken with flour. Brown chicken on both sides for approximately 2 minutes per side. Place browned chicken breast on foil lined baking sheet. Top chicken with breadcrumb mixture and lightly press for the mix to hold. Bake for 10-12 minutes; until crust is golden brown.

Pizza Crust (from Buffington's)

2 cups warm water
1TBSP yeast
2 TBSP sugar
1TBSP oil

Let sit and activate. Then add:

1 tsp salt
4-5 cups flour

Knead; let rise until double. Press in deep cookie sheet. One batch makes two sheets of pizza. Bake at 425 for 12-14 minutes. I like to brush on melted butter before baking. For added yumminess, I flip the pizza crust, once it's baked, and bake it on the other side for a few minutes. Once done, flip back over. I spread on plain old tomato sauce, sprinkled with garlic salt, oregano and parsley.

Alfredo With A Twist

Kielbasa Alfredo

Penne noodles (prepared according to package)

½ of a link of kielbasa sausage (they come in 16 oz. packages)

½ red bell pepper

½ orange bell pepper

Jar of alfredo ( I used Cheesy Ragu Alfredo)

1 T. salt

Preparations:

  1. Cook pasta as directed on package with 1 T. salt
  2. Slice kielbasa in bite size pieces, in a skillet lightly brown sausage.
  3. In a small saucepan, heat jar of alfredo
  4. Chop bell peppers, and then toss them in with sausage for last 3 min.
  5. Combine all ingredients and serve.
  6. (optional) for garnish, sprinkle parmesan cheese and a couple sliced peppers.

Total time: 20 min.

Lasagna

1 lb. hamburger
¼ cup grated onions
1 tsp. salt
1 bottle of Prego
1-2 cups water
1 large can diced tomatoes (I use home-canned tomatoes)
Fill that same can used from above and fill with water and pour that in while you're at it!
Large Dashes of oregano, parsley, garlic powder, basil
Uncooked Lasagna noodles
2 cup cottage cheese
3 cup grated Mozzarella
3 cup grated cheddar
Parmesan Cheese

Brown hamburger and add the rest up to the spices. Let sauce simmer for 1 hour to blend flavors (It should be watery at the beginning because that softens the noodles in the oven). Layers in a 9x13 pan are: Sauce, noodles, sauce, cheese, noodles, sauce, cheese, noodles, sauce, cheese, For as deep as your pan is and you want to end with cheese on top! I usually can’t get more than two layers. As far as the cheeses go, just plop on some small spoonfuls of cottage cheese everywhere, then cover with grated cheese then sprinkle parmesan cheese. Bake for 1 hour at 350° (until bubbly).

Sweet & Sour Chicken

¾ cup sugar
½ cup vinegar
¼ cup chicken broth
2 Tbsp ketchup
1 Tbsp soy sauce
3 chicken breasts cut into pieces
2 eggs beaten
Cornstarch!!

First five ingredients make sauce. Take Chicken pieces and mix with eggs. Cover with cornstarch to make it breaded (I take a few pieces of chicken at a time that way they all get it evenly) and seer on the breading in a frying pan on Medium heat for a minute or so on each side. Then put in sauce in a 9x13 pan and bake at 350° for 45 minutes.

Sweet and Sour Pork Chops

Pork Chops
1 cut onion
1 lemon
Ketchup
Brown Sugar

This recipe is really a no-measure recipe. Just place enough pork chops to fill the bottom of a baking pan (we have used bone-in and boneless). Spread the onion to cover. I DO NOT like fresh onions and use dehydrated for all of my recipies. However, dehydrated do not work for this recipe and the fresh ones are yummy in it. Squirt the lemon over the chops (bottled lemon juice works fine). Sprinkle brown sugar and dot with ketchup, just eyeballing the amount. Bake at 350 degrees for 1 1/2 hours. Really scientific recipe, I know, but it is YUMMY and SOOO easy.

This recipe is great for the carnivour in your family and great when you have a bunch of pork chops you don't know what to do with. We like to serve the pork chops on rice, of course, and drench them and the rice in the sauce. YUM-O!

Peppered Beef Tips



2 lbs beef sirloin, cut in 1 inch strips
2 cloves garlic, minced
pepper
1 can french onion soup 
1 can cream of mushroom soup


Add beef to crockpot.  Layer with minced garlic, a sprinkle of pepper, and soups.  Cook on low for 6-8 hours.  Serve over egg noodles or rice.

So easy and delicioso!

p.s. Kirk says this looks like dog food :( sorry! I usually use sirloin steak but used stew meat instead because the steak at Target was too expensive!  and I usually serve over noodles, but I was out so it was rice this time.. 'dog food' photo aside.. this is REALLY yummy!
